I wasn’t planning on writing about this, but it just turned out so yummy I have to share! ^^
I was looking for a recipe for something with spinach and of course I turned to Pinterest. I found this – rice and spinach casserole.
Let me tell you it is sooo simple and delicious.
I did some adjustments of course. I never follow the recipes to the dot and I never weigh things, I just eye ball it. Is that good? Probably not. Hhh x) But it works for me.
What I did was…
Cheese (I used cheddar)
Rice (brown in my case)
Greek yoghurt (I don’t know if that actually does anything for the recipe, but I put it in anyways lol)
On a pan fry a bit of garlic, onion and spinach (I guess you could steam it too or put it in fresh, just chopped)
Mix everything in a big bowl: rice, spinach, carrot,cheese, egg, salami, milk, yoghurt
Put it in an oiled baking dish and sprinkle with some bread crumbs
Bake it in a preheated oven and toward the end put a bit more cheese on top for about 3-5 minutes so it melts nicely.
Voila! That’s it!
Hat’s how I did it. You do your own thing.
If I had them, I would love to put mushrooms in. Next time. To make it healthier, cut out the cheese or maybe put in riccota.

Unfortunately, my Insanity days are over for now. I just got back from the Emergency and I have to lay low for at least a month. From all physical activities! Which is a nightmare for me! :S
I am very sorry I didn’t get to finish even one month! 😦 So I can’t really say much about it except I did like it while I was doing it. I didn’t lose any weight, but I did see improvement in strength and endurance. I hope you guys are staying healthy and doing your exercise. Please, do some for me too! 😉
Maybe when I get better I’ll start over from the beginning, but for now it is game over!
Haven’t been around in a while so just a quick post
It’s been really crazy! Been working double shifts + my trainings and I didn’t have time for anything!
Insanity’s going well. If everything went according to plan I was supposed to do my 2nd fit test today and see the results. However(!), as I said, it’s been crazy and I really didn’t have the time to do three days of exercise so I did them all on Sunday which is my rest day. That is why today I’m resting and I’ll do the fit test on Sunday and post the results then.
My observations so far. The first week is a killer! My legs hurt soooo much! Do the stretches! Even more then they do on the videos! I noticed my legs are stronger and my cardio is much better. That’s good. 🙂
After the fit test, I’ll see if I can do better than last time. I should do better, right? We’ll see…
Reporting after the first day! I’m telling you right now, you are going to start sweating after the first ten minutes and will be red in the face like a crab! I thought I was at least in some kind of shape, but I guess these holidays really got to me. -.-‘ The first day isn’t really that bad, but it shows you what’s to come. Be sure to keep score of your fit tests to know your progress. I will post mine in 15 days when next Fit test is scheduled so we can see if there is any progress (hopefully, there will be).
Ok. So holidays are over and it is time to get back in shape! I don’t even what to know how much I’ve eaten *nom nom nom*, but a little exercise couldn’t hurt. Or could it?
I’ve decided to start Shaun T’s Insanity workout. It lasts for 60 days (an hour a day) and you get a day off in the week. I’ve heard good things about it.
What I like from the commercials is that they don’t say ”Oh, everyone can do it! It’s easy!”. No. They tell you the truth. It is hard, it isn’t for everyone and you are going to sweat a lot! At least you know where you stand so you can prepare mentally. But hey! No pain, no gain! Right? 😉
I’m excited about this and hope I will last the whole programme. I will be putting weekly posts starting from tomorrow about my progress and later on perhaps some before/after pictures (will see how it goes).
If anyone of you have done it already, please leave a comment with any advice or if you would like to start exercising with me from tomorrow that would be great!
