Is that a thing? Skinny-fat person? Because I TOOOTALLY recognize myself in this article!

I am pretty tall for a girl and people have always said to me: Oh, you’re not fat, everything is well spread! You can’t tell anything!

And that’s the problem with us skinny-fat people! Nobody believes us we are ”fat”! Everything is fine, nothing needs to be changes, but I am talking about being healthy!

Now, I am a very realistic and objective person. I can take a step back and without judgement say how it is. A trade of a teacher, ey?! 🙂

I know I am not fat, but all I am saying is I could lose a few kg and tone up. That’s all.

And when I say lose a few kg, i don’t mean go on a crazy diet. I am not a supporter of that! 😦

I mean get back to exercising and eating healthy. It’s all about the food in the end! 🙂 Healthy choices!

I just started Kayla Itsines BBG. I can tell it’s a big community. I really like the before and after pics and I’m hoping I’ll look like that after 3 months, but the way I’m going… IDK! XD

I came across the article above and I can’t lie. It’s me! XD

From eating totally healthy to having a ”cheat meal” at 3AM, from M clothing not always being a good choice for me to the ‘‘I just ate, but I’m still hungry!”. Which is basically my life motto! -.-

Rice And Spinach Casserole

I wasn’t planning on writing about this, but it just turned out so yummy I have to share! ^^

I was looking for a recipe for something with spinach and of course I turned to Pinterest. I found thisrice and spinach casserole.

Let me tell you it is sooo simple and delicious.
I did some adjustments of course. I never follow the recipes to the dot and I never weigh things, I just eye ball it. Is that good? Probably not. Hhh x) But it works for me.
What I did was…

Ingredients:

  • Onion
  • Garlic
  • Spinach
  • Cheese (I used cheddar)
  • Rice (brown in my case)
  • Salami
  • Carrot
  • Egg
  • Bread crumbs
  • Milk
  • Greek yoghurt (I don’t know if that actually does anything for the recipe, but I put it in anyways lol)

How to:

  1. On a pan fry a bit of garlic, onion and spinach (I guess you could steam it too or put it in fresh, just chopped)
  2. Cook rice
  3. Mix everything in a big bowl: rice, spinach, carrot,cheese, egg, salami, milk, yoghurt
  4. Put it in an oiled baking dish and sprinkle with some bread crumbs
  5. Bake it in a preheated oven and toward the end put a bit more cheese on top for about 3-5 minutes so it melts nicely.
  6. Voila! That’s it!

Hat’s how I did it. You do your own thing.
If I had them, I would love to put mushrooms in. Next time. To make it healthier, cut out the cheese or maybe put in riccota.

Fat Bell Peppers

I made this yesterday and unfortunately I didn’t take good pics. I just ate it all. hhh
These are just some pictures that I quickly took to show off to a friend through WhatsApp.

I found this one on Pinterest and like the rest of my recipes, it’s quick and easy.

Ingredients:

  • bell peppers
  • rice
  • mushrooms
  • broccoli
  • bacon
  • cheese
  • eggs

How to:

  1. Cook the rice and broccoli (separately of course).
  2. Fry the mushrooms and bacon on a frying pan and mix it with rice.
  3. Hollow out the insides of the bell peppers and put them in the oven at 200 C for about 10-15 min.
  4. After you take it out, fill it with the rice, bacon, mushrooms, broccoli and on top crack an egg and top it off with cheese. Put it back in the oven for about another 15 min. Check it and see if you need to leave it in more (all depends how you want your egg to be).

Basically, I just put in whatever I found in my fridge. Be creative and put something else inside! I did a very similar thing already, but with a potato! Yum! 😀

How To Tuna Burgers

Time for one more recipe! Like the only ones I know, quick and easy and no measuring the ingredients! 😉

I you are sick of eating canned tuna the same way all the time (all I know is tuna salad), this is great!

Ingredients

  • Canned tuna
  • Eggs
  • Bread crumbs
  • Onions and garlic
  • Carrots
  • Cheese
  • Lemon
  • Sesame seeds

How to

1. Mix it all together

Simple as that. Put it all in a big bowl and get your hands dirty! Just mix it all together. You can put whatever you like. I put what I had in my fridge, but you can put whatever veggies you have. I like to put more of a lemon juice and lemon zest because I like the taste. Recommend it! Also, put enough bread crumbs so it has a nice texture and it doesn’t fall apart when you make them into little burgers.

2. Fry it

Make them into little burgers and fry them on the pan.

3. Eat them! 🙂

HOW TO ”Fried” Rice My Way

Got home today from a flight hun-gry! Had to cook something so of course I turned to my go to quick meal – ”fried” rice!

I put it under quotes because it’s not really fried rice. It is my version of it, but still very yummy! 🙂

Ingredients

  • Rice
  • Veggies
  • Onions
  • Soy Sauce
  • Bacon (or some other meat)
  • Cheese

How To

1. Cook the veggies.

Usually, I use fresh ones, but didn’t have any so I had to resort to frozen ones. Use anything you like – carrots, peas, corn, mushrooms, paprika… Whatever you like!

2. Cook the rice.

I don’t have a rice cooker so I do it old school way. Put the rice on oil for a short time and then put water in, add some salt and cover it until the water is gone. I use 1:1.5-2 ratio (rice:water) which means for one cup of ice, I put one and a half to two cups of water.

3. Fry onions and bacon (this step is optional).

I always fry onions (or garlic). I just feel it gives the meal extra nice taste and smell, but if you don’t like it, you don’t have to use it.

This time I used bacon, but other times I also put in hot dogs or chicken. Basically, you can use what you like. It is also optional. You don’t have to use it if you want a vegetarian version of a meal.

4. Mix everything in a pan.

Mix veggies and rice and put it in a pan where you fried onions and bacon.

5. Add soy sauce.

Simple a that. Add soy to everything. You don’t need a lot.

6. Add eggs.

Make a whole in the middle of the pan and add an egg or two (you’ll see how much you’ll need). Start stirring slowly mixing the egg into everything so the egg connects it all.

7. Add cheese.

Nice cheese which will melt all over! Yum! 🙂

Maybe it doesn’t look so good, but believe me it is tasty! Whenever I make it, it goes so fast! =)

As you can see, this recipe doesn’t require any measurements and you can add or remove any ingredients as you like.

I am not much of a cook, nor do I claim to know how to. I am just sharing this recipe in hopes some hungry, inexperienced student or beginner will try it and like it.
